Ingredients

  • 1 eggplant, sliced thin

  • 1 cup ricotta or cottage cheese

  • 1 cup marinara

  • ½ cup shredded mozzarella

Instructions

  1. Layer eggplant, cheese, and sauce in a baking dish.

  2. Repeat layers and top with mozzarella.

  3. Bake at 375°F for 35–40 min.
