Packed with healthy fats, protein, and just a touch of natural sweetness, these energy balls are perfect for busy mornings, post-workout fuel, or that mid-afternoon slump when you need a pick-me-up.
Ingredients
1 cup almond flour
½ cup natural almond butter (or sunflower seed butter for nut-free)
¼ cup sugar-free sweetener (erythritol or monk fruit)
2 tablespoons coconut oil, melted
1 teaspoon vanilla extract
Pinch of sea salt
Mix-In Options (Choose 2-3)
3 tablespoons sugar-free dark chocolate chips
2 tablespoons unsweetened shredded coconut
2 tablespoons chia seeds
2 tablespoons hemp hearts
1 tablespoon cacao nibs
½ teaspoon cinnamon or other spices
Instructions
Mix the base: In a medium bowl, combine almond flour, almond butter, sweetener, melted coconut oil, vanilla extract, and salt. Stir until a thick, uniform dough forms. The mixture should hold together when pressed but not be overly sticky.
Add your mix-ins: Fold in your chosen mix-ins, distributing them evenly throughout the dough.
Chill the mixture: Place the bowl in the refrigerator for 10-15 minutes. This makes the dough much easier to roll and helps the balls hold their shape.
Roll into balls: Using a tablespoon or small cookie scoop, portion out the dough and roll between your palms to form smooth balls. If the mixture sticks to your hands, lightly dampen your palms with water or coconut oil.
Final chill: Place the energy balls on a parchment-lined plate or container and refrigerate for at least 30 minutes to firm up completely.
Store: Keep refrigerated in an airtight container for up to 2 weeks, or freeze for up to 3 months.
