Ingredients
½ cup cooked quinoa or rice
1 egg (fried or poached)
½ cup spinach
¼ avocado, sliced
Salt, pepper, olive oil
Instructions
Warm quinoa in a bowl.
Sauté spinach until wilted.
Add egg and avocado on top.
Drizzle with olive oil, season, and serve.
